DFeast Friday - Shrimp Ceviche

Total Yumm-o Meal or Appetizer!
My cousin, Brian (T1D) made this on Sunday at a family gathering and it was gone it about 30 seconds! I only got 3 bites! Boo!
It was so good that I plan on making it for a meal ---- Yumm-o!!
So, this is Brian's recipe for Shrimp Ceviche . . .
Ingredients:
Directions:
In a large pot of boiling salted water, add the shrimp and simmer until just cooked through, about 5 minutes. Using a slotted spoon, transfer the shrimp to a bowl of ice water to chill.
Drain the shrimp, cut into 1-inch pieces, and transfer to a bowl. Add the lime, lemon, and orange juice, stir to combine, and refrigerate for at least 4 hours and up to 6.
Stir the tomato, onion, cilantro, and chile into the shrimp mixture and let sit at room temperature for about 20 minutes.
When ready to serve, gently stir in the avocado and cucumber, Divide the ceviche among 8 chilled martini glasses and tuck 2 or 3 tortilla chips around the sides of each.
(We actually had it in one large bowl with some chips on the side and it was fabulous!!)
Note:
When I made this on Sunday I left the cucumber out because some people don't like them. I also added about a Tablespoon of garlic salt for some additional flavor. (Good call because Laura does not like cucumbers) :)

It happens to also be Brian's (all of the kids call him AppleBee - it was supposed to be Uncle B) birthday!!

- 2 oranges, juiced, preferably sour oranges

- 1 bunch of cilantro
